Winter is coming! Or well, by Indian standards, it's already here in certain parts of the country. In Gurugram, where I stay, you can already see people in light jackets, and the kids can already be seen in sweaters. And you know what that means. It's soup season! 😃. And today we are here to share the Morning Glorie special!
Yes, this is our tried and tested vegetable soup recipe, in use since 2011, loved by kids from 6 months to 10 years. Might I add that this was one dish we were not allowed to skip from the daycare (our daycare in South City 1, Gurgaon) menu in any week. The soup, along with pasta/noodles was the Friday lunch special. It was one of the first meals (and wholesome to the boot) for our creche babies (when they started on solid food), and for the older lot it was just the most anticipated meal of the week. Even if the daycare centre in South City 1 was closed on a Friday for any reason, this meal had to be cooked on Thursday.
Of course there could be some exceptions where the kids just did not want soup, but I can say with absolute guarantee and a lot of pride that we had at least a 90% success rate when it came to feeding children soup. Now for us it was an all-season meal, but it was much appreciated in winters, and may I add, it was a favourite dish for me too!
This recipe for the veg soup is also extremely health and wholesome, and a very filling meal by itself for children.
So here we are with the recipe for the Morning Glorie Friday Special!
Ingredients
Steps Involved
Prep -
1. Peel the potato, carrots, pumpkin/bottle gourd
2. Chop all the vegetables in big chunks, and put them all in the pressure cooker
Cook -
1. Add half a cup of water to the pressure cooker, close the lid tight, and turn on the gas
2. After 2 whistles of the pressure cooker, turn off the gas, and let the pressure cooker release its pressure. The vegetables should be of a soft consistency at this stage
3. Add a dollop of fresh cream or malai, and salt to taste. Use a hand blender to get the mixture to a smooth consistency. If you do not have a hand blender, you can use a mixer as well. Only let the broth cool down before using the mixture
4. Use a strainer to separate the mulch from the broth. You may add some more water to the broth to get the desired consistency. Taste and add salt if needed. Your soup is now ready to serve 😊
